Yam is a common tuber in the Azores and widely used in local cuisine. It’s easy to find at Mercado da Graça, in the centre of Ponta Delgada, or in other vegetable and produce markets across the island. The yam soup at Sabores da Terra restaurant in Povoação is unexpected and delicious. How can a little-known tuber, which is rarely the star of the show, become the base of a soup that even broth enthusiasts find surprising?
