Dried Octopus and Dried Octopus Roe

Algarve

Throughout the year, the fishermen of Olhão dry the Litão they catch. This fish, a small shark species, is scaled, salted, and dried in the sun on reed frames.

Once dried, it is stored until Christmas, where it remains the main dish on the table for families in Olhão during the festive meal.
