Behind his family’s stall at Olhão’s fish market, Cristiano proudly upholds an Algarve tradition.

Alongside the fresh catch of the day, he sells two delicacies rarely found elsewhere in Portugal—dried octopus and dried fish roe.

With warmth and generosity, he explains the age-old drying process, always done under the sun. The octopus is stretched out on a drying rack, while the roe is carefully arranged on a table—both exposed to direct heat and light, allowing them to shed moisture and develop a firmer texture and longer shelf life.

Those who have tasted them say they’re nothing short of irresistible.
